A Celebration of Maine

I usually make some sort of celebration meal when I finish a blanket. To celebrate finishing the Iron Giant blanket I made Maine themed foods. The movie takes place in the fictional town of Rockwell, Maine. The Iron Giant blanket is for my 20 year old son. He requested that I make lobster rolls.

We dined on my version of lobster rolls and had homemade blueberry buckle for dessert.

The recipe for lobster rolls is available here. These lobster rolls are NOT recommended if you’re on a diet.  They sure did taste good though! You can make them healthier by removing the butter and halving the amount of mayonnaise. If you have lobster tastes but a hamburger budget, substitute cooked shrimp. It will still be plenty tasty. (In fact that’s what I’m going to do next time I make them.) I’m not usually a fan of iceberg lettuce but it adds a nice cool crispness to these sandwiches.

I used the Taste of Home recipe for classic blueberry buckle. You can find that recipe here

    1. Well there’s a full cup of butter. You could always whip up some fresh whipped cream to top the blueberry buckle with. 😉 I don’t cook low fat. I cook full flavor.
